Weekly Meal Plan - Number 1
Here is a simple meal plan for you. This is a flexible meal plan to act as a guide to help you plan your dinner for the week. Includes 6 recipes from the blog, mainly vegetarian, but one is a chicken recipe. You do not have to stick to these days, feel free to change them according to your schedule. You will find some useful printables at the end.

Monday - Pineapple Curry Rice

Tuesday - Simple Chicken Roast with rice

Wednesday - Pasta with asparagus
Delicious Pasta with asparagus. Must have recipe for times when you have to get dinner ready in no time. Ways to perk it up at the end of the post. This recipe for pasta with asparagus boasts of fresh flavors. Use the best quality ingredients to get amazing results.
Prep-work for Thursday's meal: Soak rice and Udad dal in the morning and make dosa batter in the evening. Leave it to ferment overnight. Refrigerate the fermented batter.
Thursday - Vegetable Uthappam
I love it when I can serve breakfast dishes for dinner. I use my regular dosa batter (which you should prepare ahead of time) and use them to make these savory vegetable loaded south Indian style pancakes. Serve them with some tomato chutney (The chutney can be made ahead of time and stored in the refrigerator). Finely chop/grate your favorite vegetables and store them in an airtight container in the refrigerator to make the vegetable uthappams. My choice of vegetables would be onion, tomatoes, grated carrots, green bell pepper, cilantro, etc.
Friday - Eat-out
This is the one evening of the week, where we usually eat out or bring home some take-out food. We decide on a restaurant to try or revisit based on what cuisine we are craving that week and eat out. Your kitchen needs an off-day too :).
Saturday - Paneer Pulao
Paneer and corn pulao is one of the easiest recipes that you can make on a weeknight for dinner. Ready in about 30 minutes from scratch. Pan-roasted paneer (Indian cottage cheese) pieces amp-up the nutrition value. Simple rice recipe for a quick Indian dinner. A complete meal when served with raita and Indian pickles. Simple spices used in the recipe adds top-notch flavor. You can prepare rice ahead of time. You can use home-made paneer or store-bought paneer.
Sunday - Cauliflower curry with Roti
Perfect Indian Cauliflower and Chickpea Curry is a healthy, easy, and vegan dish. A satisfying meal that’s full of flavors! & oh! so delicious! You can either make roti at home or use store-bought Naan to go with the curry.
