How I Became The Coolest Mom Ever (For A Day)
For the last couple of days, I was down with sore-throat and cold. (which has now turned into the most annoying cough). I was so down low, that my husband had to manage everything including getting Sonshine ready for school - which is quite a tedious process. Sonshine is really a good boy, but needs a lot of prompting to get work done.( Given a choice, he would sit and read all day).
My husband, who was in charge of getting Sonshine ready for school, got the breakfast - which was a cup of milk, microwaved for 30 seconds. Yay!! Breakfast ready, he shouted. Now, the question of packing lunch for Sonshine. (Sonshine, does not like school hot lunch unless its cheese pizza, so hot lunch was definitely out of question). Seeing my husband struggling with the decision of what to pack for lunch, I pointed in the general direction of the kitchen counter and hoped that he would find the bread and will pack that for lunch. I dozed off.
Anyways, since I was not keeping well and my paranoia of spreading the evil germs was at its peak, Sonshine was under strict orders not to come 10 feet of me. But that went flying in the air in the evening when Sonshine came home. He came and bear-hugged me and said... "Ma... you are the coolest mom, EVER!". (Duh! I always was, wasn't I?). To keep the conversation going, I ask, "But why?". Sonshine cannot control his excitement, "Because... because you packed a cake slice for my lunch".
I realized what had happened... When I pointed to the kitchen counter, my husband saw the cake slices(one of my experiments - turned out to be a "hard-but-tasty-cake-with-butter-cream-frosting") instead of the bread. He did not think further, since I had (he thought)approved cake slice as lunch.
Anyways, I was the "Coolest mom EVER".
For a day.
I was feeling better by then, and my taste buds were craving something tangy and spicy. And I wanted it be easy, since my body was still weak from the flu-like symptoms. So, the dinner was simple - Pej(in Konkani) or Kanji(in Malayalam) or rice porridge(loosely translated to English) with Kerala Style Grilled Fish and Ulli Thenga Chutney (a.k.a Onion Coconut Chutney).
Kerala Style Grilled Fish
Ingredients
- 3 Fillet Tilapia skinless boneless frozen, thawed
- 1 tsp Cayenne Pepper
- 1-½ tsp Paprika
- ¼ tsp Turmeric
- 1 tbsp Vinegar
- 2 tbsp Onions minced dehydrated store bought
- 1 tsp Garlic Powder
- 2 tbsp oil plus a little extra for brushing
- Salt to taste
Instructions
- Mix all the ingredients except fish to prepare the marinade.
- Cut the thawed fillet into 1" pieces.
- Marinate the fish pieces using prepared marinade for about 10 minutes.
- Meanwhile, preheat the oven to 400 degree Fahrenheit.
- Line a baking tray with aluminium foil. Brush oil. Layer the fish slices making sure they do not overlap.
- Bake for about 25 minutes till the fish is cooked. Kerala style grilled fish is ready to serve.
- If you like the fish a little crunchy, broil at 500 degree Fahrenheit for 5 minutes. Keep checking intermittently, because fish slices may brown very fast at this stage.
