Total Time 8 minutes
Servings 20

Ingredients

  • 1 Baguette; sliced into 20 slices or more.
  • ½ cup Nutella/Hazelnut Spread
  • 1-2 tablespoon Butter;softened
  • 1 tin Mandarin Oranges; drained You would need approximately 40 slices
  • 20 Raspberries

Garnish

  • 1-2 teaspoon shredded coconut ; slightly toasted
  • 1-2 teaspoon sliced almonds ; slightly toasted
  • Mint Leaves
  • 1 teaspoon Turbinado Sugar OR any sugar with bigger granules optional

Instructions

Preparation

  • Drain the mandarin oranges from the tin.
  • Slice the baguettes as per the desired thickness.
  • Apply a little butter on the baguette slices and broil in the oven. Alternatively, you can toast it on a skillet on the stove top. If you are broiling in the oven, place the oven rack as close to the top coil of the oven as possible. Broil for a couple of minutes. Keep a watch on the baguette slices since there is a chance that they will burn.
  • Remove from the oven and let it cool for a while.
  • Wash and pat dry the raspberries and mint leaves.
  • In a small pan, over medium heat, roast the shredded coconut and sliced almonds till aromatic and slightly brown in color.

Assembly & Garnish

  • Spread a teaspoon (or more) of Nutella/Hazelnut spread on the toasted baguette slices.
  • Place the drained mandarin orange slices and raspberry on each of the slices. Garnish with toasted shredded coconut, sliced almonds, and mint leaves. Sprinkle the turbinado sugar.
  • Serve immediately.

Notes

1. I cannot stress the importance of keeping a watch on the baguette slices if you are using the oven to broil them.
2. The measurements in the recipe are kind of an estimate. You can always do more (or less).
3. Though I have mentioned ½ cup of Nutella, I do not transfer the Nutella to another cup or container. I just scoop out directly from the jar.
