No-Bake Fudge Mint CheeseCake

Fudge mint, yogurt, cheese and candy cane/peppermint come together beautifully in this delectable, eye-candy, no-bake fudge mint cheesecake.

Ingredients
  

  • 8-10 Fudge Mint Cookies

Cheesecake Mixture

  • 2 cups Yogurt make hung yogurt with this
  • ¼ cup grated Paneer
  • 2-3 tablespoons Sugar; powdered
  • 2 tablespoons grated Beetroot
  • A few drops peppermint essence optional

Garnish

  • 2-3 Peppermint candy
  • 8-10 Mint leaves; washed and pat dried
  • Grated Chocolate

Equipment Required

  • 2 Mixing bowls
  • Small angled spatula
  • Piping bag
  • Star piping tip
  • Mortar & Pestle
  • Serving Tray

Instructions
 

Prepare Cheesecake Mix

  • In the larger mixing bowl, add hung curd, grated paneer, powdered sugar and mix well. (You can use your hand mixer or a whisk to mix).
  • You can also add the peppermint essence, a drop at a time, and mix well. Taste the mix after each addition, till you get the perfect peppermint taste that you like. This step is optional; follow it only if you are adding the essence.
  • Remove ⅓rd of the cheesecake mix into a smaller mixing bowl. Place the grated beetroot in a sieve and squeeze the beet juice into the smaller mixing bowl. Prepare the decorating bag

  • Cut the tip of the decorating bag and fit the piping tip snugly inside it.   • Tilt the bag slightly and using an angled spatula, fill (only on one side of the bag) the white colored cheese cake mix into the bag.[br][img src="http://www.framedrecipes.com/wp-content/uploads/2014/12/DSC_0283_No-Bake_Fudge_Mint_Cheesecake_03.jpg" width="600" height="400" border="0"]
  • Scoop out the red/pink colored cheesecake mix and fill the other side of the bag.[br][img src="http://www.framedrecipes.com/wp-content/uploads/2014/12/DSC_0285_No-Bake_Fudge_Mint_Cheesecake_04.jpg" width="600" height="400" border="0"]
  • Gently twist the piping bag at the top, but make sure that the colors do not mix too much. Refrigerate till ready to use.

Assembling

  • Crush the peppermint candies using the mortar and pestle. Make sure that you have pieces that have the red stripe.

  • Start at the edge and work your way toward the center of the cookie in a spiral shape, gently squeezing the pipping bag from the top. When you reach the center, stop squeezing and gently lift the tip of the piping bag. Notes

1. Preparation time does not include the time required to make Hung Yogurt. This recipe assumes that you have hung yogurt ready to use. [br]2. I do not use peppermint essence while making the cheesecake mix. I find the minty taste from the fudge mint cookies are enough for my taste. But if you like the cheesecake mixture also to have the minty taste, do add a few drops of peppermint essence, tasting after each drop, since the mint taste can become a little overwhelming.[br]3. Before piping the dual tone cheesecake mixture onto the first cookie, do a test run by squeezing the frosting on a napkin to ensure you are getting the effect you want.
