Oatmeal M&M Cookies

Oatmeal M&M Cookies - perfectly crunchy - loaded with oats and M &M candies. Sheer delight with milk. And the best part? They do not "taste" healthy.

Ingredients
  

  • 2 cups old fashioned oats divided
  • 2 cups All Purpose Flour
  • 1 tsp baking soda
  • 1 tsp Salt
  • ½ cup 1 stick Butter, melted
  • ½ cup Ghee/clarified butter
  • 1 cup Granulated Sugar
  • 1 cup brown Sugar
  • 1 tsp Vanilla
  • 2 Large Eggs
  • 1 cup M&M Candies mini

Equipment Required

  • Large Mixing Bowl
  • Small mixing bowl
  • Measuring cups & Spoons
  • Baking Tray
  • Parchment paper
  • Wire Rack
  • Indian Style mixer-grinder/Food Processor
  • Mittens
  • Spatula to mix the dough together
  • Spatula to remove the cookies from the baking tray to the wire rack.

Instructions
 

  • Preheat the over to 350 degree Fahrenheit (180 degree Celsius).
  • Line your baking tray with parchment paper (that can be used at 350 degree Fahrenheit (180 degree Celsius)).
  • Powder 1 cup of old fashioned oats in the dry attachment of Indian style mixer-grinder or using a food processor.
  • In a small mixing bowl whisk together all purpose flour, baking soda and salt.
  • Mix together melted butter and ghee/clarified butter in a large mixing bowl.
  • To the same mixing bowl, add the granulated sugar, brown sugar and vanilla essence and beat well till the sugars are incorporated into the butter and ghee/clarified butter.
  • Add the eggs and beat well together.
  • To the above mixture, add the flour, baking soda and salt (which was whisked earlier in the small bowl). Add oats - both regular oats and the ground oats and mix well using a spatula. Mix in the M&M candies and mix everything together (see Recipe Notes).
  • Spoon about ½ tablespoon of dough onto the prepared baking tray. Place dough balls about an inch apart on the baking tray.
  • Bake at 350 degree Fahrenheit (180 degree Celsius) for 10-15 minutes. Remove from the oven and place on a wire rack to cool. When you remove it from the oven, the cookies would be a little soft, but once cooled they would be crunchy. Repeat for rest of the dough.
  • Once the cookies are at room temperature, store them in an air tight container.

Notes

1. Cooking Time - Using my baking tray I could make about 20 cookies in a batch. Each batch would take about 15 minutes.The actual cooking time would depend on your baking tray size.[br]2. I noticed that sometimes, M&M candies "hide" inside the dough and not visible when baked. So, in step 10, I keep aside a few of the candies instead of adding them all into the dough. And once I place the dough balls on the parchment paper, I place the M&M candies strategically on the dough balls before I place the baking tray in the oven.
