Blueberry Sparkler

Enjoy this blueberry sparkler on a hot summer day - the goodness of blueberries and the tingling of soda - nothing can be more refreshing than this.

Ingredients
  

For the Blueberry Syrup

  • 3 cups approximately 400 g/14 oz Blueberries
  • 2 cups Water divided
  • 2-3 Small pieces of Lemon Rind
  • 2 cups Sugar
  • 2-3 tbsp Lemon Juice

To Serve

  • Water/Sparkling Water/Club Soda

Equpiment Required

  • 3 medium sized Sauce Pans
  • Sieve/Muslin Cloth
  • Peeler

Instructions
 

  • Wash the blueberries in cold water and drain.
  • To make the sugar syrup, add 1 cup water and 2 cups sugar in a medium sized sauce pan and dissolve the sugar over medium heat. Once the sugar is dissolved completely, bring it to boil. Remove from heat and let it cool to room temperature.
  • Meanwhile, add the blueberries, 1 cup water and lemon rind to another medium sized sauce pan.
  • Bring to boil and then simmer it down for about 20 minutes or till the blueberries are cooked well.
  • Remove the lemon rinds and sieve the blue berry mixture using a muslin cloth or using a big sieve.
  • Once the sugar syrup and the blueberry mixture has cooled down completely, add the sieved blueberry mixture and 2-3 tbsp of lemon juice to the sugar syrup and mix well.

To Serve

  • Just before you serve, dilute the blueberry syrup with chilled water/club soda/sparkling water. Garnish with lemon peels or blueberries. Serve cold.

Notes

1. You could try using strawberries/raspberries for this recipe.[br]2. You can store the unused blueberry syrup in the refrigerator in a airtight glass bottle for about 7-10 days.[br]3. This recipe makes approximately about 3.5 cups to 4 cups of blueberry syrup.[br]4. Preferred dilution - ¼ cup blueberry syrup and ¾ cup club soda/water.[br]5. While calculating the nutritional values, only the blueberry syrup was taken into account. The calories if any in the club soda/sparkling water was not considered. [br]6. The nutritional values are based on the assumption that this recipe serves 12 people.
