Hummus Filled Cucumber Cups

Peeled cucumbers are hollowed out and filled with protein rich hummus and garnished with roasted red peppers.

Ingredients
  

  • 3 Cucumbers
  • Hummus - Recipe available [here.]
  • tsp Cayenne See Recipe Notes
  • Salt to taste
  • Few slices of Roasted Red Pepper for garnish See Recipe Notes

Instructions
 

  • Wash and Peel Cucumbers. Cut them into 1 inch long pieces. Using a small spoon or melon baller, scoop out the insides of the pieces to make a hollow about ½ inch deep.
  • Sprinkle salt and cayenne pepper on the pieces.
  • Place a dollop of hummus in the hollow. Garnish with a slice of roasted red pepper.

Notes

1. You can use Paprika (mildly hot pepper) instead of Cayenne.[br]2. If you don't have roasted red peppers, you can use sliced green or black olives to garnish.
