Sugar Kissed Yogurt Cardamom Cake

Sugar Kissed Yogurt Cardamom cake is a moist cake made with supplies readily available in the pantry and refrigerator.

Ingredients
  

  • 1.25 cup All Purpose Flour
  • 1 cup Sugar
  • ¾ cup Yogurt See Recipe Notes
  • 1 tsp Baking Powder
  • 1 tsp Cardamom Powder
  • 2 Eggs
  • 5 tbsp oil See Recipe Notes
  • ½ tbsp Vanilla Essence
  • Softened Butter for greasing

Garnish

  • 2 tbsp Powdered Sugar/Confectioner's sugar

Instructions
 

  • Pre-heat the oven to 350 degree Fahrenheit.
  • Grease a 8 inch cake pan with butter and lightly dust with flour.
  • Sift baking powder, all-purpose flour and cardamom powder. Keep aside.
  • In a large mixing bowl, beat the eggs till light and fluffy.
  • Add oil, 1 tbsp at a time, beating after each addition.
  • Mix in the essence at this stage.
  • Pour the sugar gradually into the egg mix and beat well.
  • Add yogurt, ¼ cup at a time, beating after each addition.
  • Gently fold in the flour mixture using a wooden or silicone spatula.
  • Pour into the prepared cake tin, level the top and bake at 350 degree Fahrenheit for about 40 minutes. Test the cake by inserting a skewer and if it comes out clean, cake is ready.
  • Cool the cake on a wire rack to room temperature before garnishing the cake with sugar.

Garnish

  • Using a fine meshed sieve, sprinkle powdered sugar over the cake.

Notes

Yogurt used should not be tangy. In India, I used to use the Amul Dahi. In the US, I use the store bought plain yogurt(not the Bulgarian Yogurt)[br]You can use any oil that is neutral in taste to make this cake - like Vegetable oil, sunflower oil or olive oil.[br]Let the cake cool down to room temperature before you garnish with sugar.[br]The cake is good on the same day, but better the next day.
