Quick Ingredient Run Down
The ingredients are not hard to find. These are pretty much always available in your pantry which makes this super easy to prepare.
- Potatoes
- Garlic Powder
- Red Chilli Powder ( Use Kashmiri Red Chilli Powder OR Sweet Paprika - if you like them spicy use Cayenne or any other spicy red chili powder). Adjust the quantity to suit your taste. My family likes this spicy, so I use more than the quantity of the red chili powder mentioned in the recipe card.
- Dried Thyme (optional; add it if you have some in your pantry)
- Salt
- Olive Oil
Equipment
- Sauce Pan
- Cooking Spoons
- Measuring Spoons/Cups

Step By Step Instructions
PREP WORK
Peel, wash, and cut potatoes into ½-inch thick pieces.
Get all your ingredients ready.
COOKING
Parboil potatoes in water with salt for about 15 minutes. Do not overcook the potatoes, cook them just until they are fork-tender - when you insert a fork, you meet the least resistance. :).
Parboiling potatoes with salt, helps the salt to penetrate the pieces making them well-seasoned inside out.
Drain the potatoes from water and immerse them in cold water. This cools down the potatoes and prevents further cooking. Darin again using a sieve or colander and remove excess water.
Transfer the potatoes to a mixing bowl. To the mixing bowl, add red chili powder, garlic powder, crushed thyme, salt. Drizzle oil and mix well to combine. If you are comfortable, you can toss the pieces around too.
Grease the air fryer basket with a little oil. This prevents the potatoes from sticking to the bottom and makes cleanups easy. Add the seasoned potatoes into the air fryer basket. Place them in a single layer.
Start in the Air Fry preset mode. Cook the potatoes. Toss the potatoes at halfway mark.
Remove from heat and transfer to a serving dish. Serve hot garnished with parsley.
If there is no preset mode in your air fryer :
Temperature: 400 Degrees F and cooking time: 20 minutes
My air fryer has a food turn indicator setting. This setting is pretty useful since the machine beeps halfway through the cooking process. If this setting is not available in your model, just use a timer.
What Kind Of Potatoes Work Best?
- Yukon
- Yukon Gold
- Russet
Tips To Get Best Results
- If you are in hurry, you can skip the parboiling step, but I love how well seasoned the potatoes taste when you parboil them. Do try it both ways and see if you notice the difference.
- Cut the potatoes into even sizes as much as possible.
- Lay the seasoned potatoes in one layer in the air fryer. Do not overcrowd the basket. If you are making a large batch or have a smaller air fryer, use the trivet (or multi-purpose rack) that comes with the air fryer to cook what does not fit into the lower layer of the basket. OR work in batches.
- I recommend drizzling a little oil on the potatoes to help the spices adhere to the potatoes.
Leftovers?
Leftovers can be stored in an airtight container for three to four days. Reheat at 400 degrees F for about four to five minutes in the air fryer before serving.
