Breakfast is THE most important meal of the day.
Mornings are rushed - some days, just getting ready itself feels like a major accomplishment. There are days when eating a healthy breakfast is the last thing on your mind. A bowl of cereal on such days feels like a gourmet meal.
Forget that bowl of cereal; here are 7 great breakfast ideas to start your mornings right. All it takes is a little planning, and you will be thrilled to see it does not involve a Herculean effort to get breakfast ready.
There are sweet breakfast ideas and if you are more of a savory breakfast kinda person, you will find some great ideas too. And though I cook Indian food for most meals, I tend to mix and match and try out some other cuisines too. Go through each of these breakfast ideas and you will be amazed as to how many easy and quick breakfast ideas are there. I even have a recipe that gets ready in 5 minutes. I am not kidding 🙂 .

Nutella French Toast
Nutella-cream cheese stuffed French toast is perfect for rushed mornings. No prep work is necessary and the breakfast gets ready in 20 minutes tops (for 3 people).
Khara Pongal
Khara Pongal (call it South Indian Risotto or a polenta) is a savory porridge packed with protein and carbs and good quality fat. Gluten-free and is easily veganizable 🙂 . Though it looks time consuming, most of it is waiting time, where in you can do other morning-y stuff and your breakfast gets ready on its own in the pressure cooker. And what is better, you can totally make it ahead of time and reheat it in the mornings.
Plain Dosa
Plain Dosa (consider it like a rice crepe) is a South Indian staple. Now, this requires a little bit of planning. It needs soaking, grinding and fermenting (naturally fermented, good for your digestive system) for a few hours, but once the batter is ready, this would last you for a couple of days. I would suggest you plan to make the batter over the weekend and you should be good for the next few days. Serve with Coconut Chutney or Tomato Chutney. The actual cooking time depends on the number of dosas you need. Plan for 2-3 minutes per dosa and I would go by 2-3 thin dosas per person (guesstimate).
Avocado Toast
Eating healthy should be easy. Now, you do not have an excuse not to eat a healthy breakfast. Try this avocado toast on toasted bread (choose a healthy whole-wheat bread, or multi-grain bread or even make this cumin bread at home). Say YES to delicious avocado butter. Three different options to enjoy the avocado toast. And it hardly takes 10 minutes to make.
Akki Roti
Being a South Indian, rice is kinda our staple. I always have rice at home. This Akki Roti is a nice way to finish up the left over rice. And amp up nutrition by adding your favorite veggies. Again, plan for 2-3 minutes per roti on this one. Serve with Tomato Chutney (this chutney can be made-ahead). Though Akki roti tastes best when fresh, it can also be made-ahead and reheated on a griddle, when really hard-pressed for time.
Chia Seeds Breakfast Bowl
Hohoho!!! It is like having a dessert for breakfast. This is one of the easiest breakfast recipes ever. If you can spare 5 minutes in the evening, your breakfast is ready for you the next day morning. Yes! 5 minute breakfast, that is all it takes. Check out my version of chia seeds breakfast bowl!
Uthappam
The Dosa batter you made over the weekend works out well for Plain Dosa as well as Uthappam. Uthappam is like an Indian Pancake (of course gluten-free and vegan) and is loaded with veggies. Serve with Coconut Chutney or Tomato Chutney. Again, plan for 2-3 minutes per Uthappam.
Though I call them 7 great breakfast dishes, these dishes are good for a lazy weekend brunch or a casual get together. These are mostly healthy, some slightly indulgent, but are guaranteed to keep you full till lunch. These are well balanced, nutritious, healthy and kid-approved breakfast dishes.
